Royal Icing
2 lbs confectioner's sugar
5 tbsp meringue powder
3 tsp extract (vanilla, almond, lemon, etc.)
3/4 cup warm water

• In large bowl or in bowl of stand mixer, gently beat together sugar & meringue powder on lowest setting just until combined
​
• Combine extract with water, creating an emulsion
​
• With mixer still on lowest speed, slowly add the extract emulsion to the bowl. Once fully added, set mixer to medium speed and mix until thick and fluffy
​
* At this point you can separate the icing into bowls and color with gel food coloring and mix until color is well blended
** When leaving icing out in between decorating, cover top of bowl(s) with damp paper towel and plastic wrap
