Martha's Company

1 box angel hair pasta

2 lb. low fat ground beef

1 onion, chopped

1 28 oz. can crushed tomatoes

1 ½ cups cottage cheese

8 oz. cream cheese, softened

½ cup sour cream

1 ½ cups shredded mozzarella cheese

3 tbsp olive oil

1 tbsp tomato paste

3 cloves garlic, minced

1 tsp of each: oregano, basil, parsley, and crushed red pepper

Salt & pepper

•In large skillet over med. heat saute garlic & onions in olive oil. When onions are soft, add ground beef to pan & season with salt and pepper. Once beef is cooked through, drain any fat

​

•Add crushed tomatoes, tomato paste, and herbs. Let simmer

​

•In separate bowl, combine all cheeses with the exception of ½ cup shredded mozzarella

​

•Cook pasta according to package directions and drain

​

•In deep casserole dish, spread ½ the noodles, cover with ½ cheese mixture, then ½ of the meat sauce and repeat. Top the final layer with the remaining ½ cup shredded mozzarella

​

•Bake uncovered at 350° for 40 – 45 min.
