Fish Tacos with Mango Slaw & Avocado Crema
1 lb white fish (haddock, cod, etc.)
1 tsp cumin, garlic powder, onion powder & oregano
1/2 tsp cayenne
1 tbsp olive oil
1/2 cup fresh cilantro
1 mango, peeled & diced
1/2 small red cabbage, shredded
1/4 cup red onion, chopped
1/3 cup apple cider vinegar
2 limes, juice & zest
1 avocado
1/4 cup sour cream
salt & pepper
flour tortillas
• In a medium bowl mix together cilantro, mango, cabbage, red onion, apple cider vinegar, juice of 1 lime, salt and pepper. Cover & set aside
• In a small bowl, combine spices: cumin, garlic powder, onion powder, oregano, cayenne pepper, salt & pepper.
• Prep fish for grill by lining a grill tray with foil. Drizzle olive oil and lay fish on top. Cover fish with spice mixture & grill until full cooked through
• While fish is cooking, blend together avocado, sour cream, lime zest & remaining lime juice
• Toast your tortillas & build your tacos! I typically layer avocado crema, fish, and top with the mango slaw
